well not many Gambians can afford much but ill tell you what i think Gambia needs is a good fishing tackle shop, they only have the one and that's full of junk and always closed. Gambia is famous for fishing it has big competitions every year and lots of tourists go just for fishing, could be worth thinking about
this isnt uk but its usa, might help

Although well meaning [I guess] the answers you've got so far are well off the mark. People go and stay in hotels and never see the real country. They don't experience the sea, where it is at it's best, they stay in their hotel pools!
I know this place and its people, having lived here on and off since 1994.
I skinny dip in December, no problem. The sea near our place is safe calm and ideal for swimming, but no surf. Around the head the sea has more surf and then you can encounter cross tides. The worst cross tides in the whole country are where most of the hotels are! Stupid or what!
Check our website.
I suggest you try www.getsuk.org (Gambia Education Teaching Support) - a British charity which does exactly what it says on the tin.
On their website you'll find information about volunteering in Gambian primary schools and nurseries (for which you will need a police check.)
They are also affiliated to GTS (Gambia Tourist Support) - another charity providing support for tourists whilst creating jobs for locals. On their website www.gambiatouristsupport.com you'll find lots of useful 'tell it like it is' stuff about The Gambia in general.

Africa is the mother load of all mosquitos i know that first hand and it is due to all the health practise needed there and so on, so it hard to tell. When i say Africa i mean all the countries there including Gambia. Think about it, if mosquitos can cross from there to North America and bring West Nile virus, then what about flying to the neighbouring countries which aren't so far? I lived in 3 countries there (came from one) and it's all the same scenario with the misquitos especially following rain seasons, etc. that's when they're worse. Best thing to do is bring a repellent, or something.Hope that helps, take care.
Skydiving, Dirtbiking, Fourwheeling(ATV's)
You can even go Deep sea Fishing.

Gambia has quite a weak currency. When I was there there was not a single ATM in the country, and no currency exchange at the airport (it was a year ago, so may have changed).
You will never get a great deal for currency exchange, but the safest and usually the best way is to take £ sterling and exchange it in the Hotel you are staying in.
You can order currency in advance from eg. Marks and Spencer currency exchange, but I do not know anywhere that keeps their currency in Stock and the order can take up to 2 weeks to process
The same as with many other African tribes, it is an initiation ritual. The young boys are subjected to a painful procedure while away from home for the first time, they have to survive as a team and prove their independence. This ritual is also the entry into 'manhood', those who survive are accepted on equal status once they return from the ordeal. During their period away from home while healing the procedure, they were instructed by older men about the 'facts of life'
Why would you need that info? Why don't you directly contact that hotel for this info.

Remember you are visiting a third world country. Gambia is well off compared to many African countries but the local lifestyle is a subsistence one. However modest your means you are wealthy compared to them. Be discrete with your expensive toys. Everyone wants to talk to you and you will be surrounded by children. It costs money for them to go to school; they have to provide their own paper, pencils, uniforms! So go armed with some stationery and sweets for the children. Gambians seem to have a sweet tooth!
The Abuko Nature Reserve is excellent for wildlife, and is not too far from Banjul. A trip down the Gambia river towards Georgetown is a great experience, and the sunsets can be fantastic. A journey in a dug out canoe is an interesting experience. You may find a local guide, who will be able to take you around town and maybe even their own house.
If you can get a group of you together, it is worth hiring your own taxi and asking them to take you to areas of interest, or even to an African village. The beaches are fantastic, but are best avoided at night. I don't know how tour companies do things now, with the problem of liability etc, but you may be able to get a visit into Senegal to spend time on the wonderful beaches there. There will also be opportunities, en route, to see Gambians at work in agriculture and also to see locals clamber up the tall pall trees to collect fruit.
The people are very friendly and always have a smile for visitors. I believe that water-sports are becoming more popular now too.
Have a great time!
I do not think that any nation is known for speaking to seahorses. Perhaps someone is playing a joke on you.
